Ingredients

  • 800 g / 28 oz can of tomatoes
  • 1 L / 2 quarts fish stock or clam juice
  • 1 big pinch of saffron
  • 1 big pinch turmeric
  • Salt and Pepper
  • 2 kg / 4 pounds mixed seafood
  • 1 fennel bulb, middle part removed
  • 1 stalk of celery
  • 1 clove of garlic, peeled
  • 2 big onions, peeled
  • 2 big carrots, peeled
  • 1 handful of parsley, chopped
  • 1 teaspoon fennel seed
  • 2 bay leaves
  • olive oil
