Ingredients

  • 1 tablespoon olive oil
  • 4 chicken thighs (about 2 pounds in all)
  • salt, to taste
  • Fresh-ground black pepper, to taste
  • 1 teaspoon oregano, dried
  • 1 teaspoon basil, dried
  • 1 small onion, chopped
  • 3 cloves garlic, diced
  • 1 cup low-sodium chicken broth
  • 1 14.5- ounce can diced tomatoes, and juice
  • 1 2.25- ounce can black olives, sliced
  • 1/4 cup fresh basil, chopped
