lees without the green part, split in half without cutting to the bottom so that they are in a «butterfly» cut and clean

good quality olive oil
4 slices
of seedless yellow lemon
2 thyme

garlic cloves

Instructions
Preheat oven to 200°C
In a bowl mix the broth, oil, salt and pepper
In an oven safe oven arrange the leeks to fit in a single layer
Add the mixture of broth and oil
Arrange garlic cloves, lemon slices and thyme branches
Cover with aluminum and bake for 45 minutes
Uncover and let cook until the leeks are golden and the liquid is at ¼ of its volume
Serve
Remove roots, outer leaves, and tops from leeks, leaving 6 inches of each leek. Add leeks and mushrooms, and saute 6 minutes or until the vegetables are lightly browned. Cover, reduce heat, and simmer 15 minutes or until leeks are tender. 6 leeks

There is a great butcher in Wading River called My Butcher. The meats are always top quality and the guys who work there are knowledgable, friendly and will custom cut whatever you want
Preparation. Heat the oil in a large Dutch oven or other heavy-bottomed, lidded pot over medium heat. Stir in the onion, garlic, and ginger and cook just until the onion is soft and tender, about 3 minutes
