Braised leeks

  • 4 medium lees without the green part, split in half without cutting to the bottom so that they are in a «butterfly» cut and clean
  • 2 cups organic chicken broth
  • 1 cup good quality olive oil
  • 4 slices of seedless yellow lemon
  • 2 thyme branches
  • 2 whole garlic cloves
  • ¼ teaspoon kosher salt
  • 1/4 teaspoon black pepper


    Preheat oven to 200°C
    In a bowl mix the broth, oil, salt and pepper
    In an oven safe oven arrange the leeks to fit in a single layer
    Add the mixture of broth and oil
    Arrange garlic cloves, lemon slices and thyme branches
    Cover with aluminum and bake for 45 minutes
    Uncover and let cook until the leeks are golden and the liquid is at ¼ of its volume
