Ingredients

  • Ingredients (for 6 people as a meze or 4 as a main)
  • 1 octopus (about 1 ½-2 Kg), cleaned and with its tentacles detached and the head (the mantle cavity) cut in half
  • 2 medium yellow onions, coarsely grated
  • 3 cloves of garlic, minced
  • 1 tbsp of tomato paste
  • 2 bay leaves
  • the leaves from 3-4 fresh thyme sprigs, finely chopped (or 1 leveled tbsp of dried thyme)
  • 120 ml of olive oil
  • 5 whole allspice berries
  • 150 ml of white dry wine
  • 100 ml of white sweet wine
  • salt (if needed)
  • pepper
