  • 200 ml ricotta or drained mild cottage cheese
  • 1 egg, beaten
  • 1/2 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • Batter
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 3 eggs
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup orange juice
  • Fresh Raspberry Sauce
  • 1 cup raspberries*
  • 1 tablespoon sugar (or simple syrup)
  • 1 teaspoon cornstarch
  • 1/4 cup orange juice
  • 1 tablespoon brandy (or orange liqueur, such as Grand Marnier)
