But, I did manage to cook a little this past weekend, and these shrimp tacoswithavocado corn salsaand herb crema (um, sorry for that lengthy title, I usually try not to be THAT person) made everything a little less crazy around here
In Mike world, the more ingredients in a salad the better, so when I told him that I was making taco salad a) he got super excited because taco salad always has a minimum of too many ingredients and b) he figured out the quickest way to double the ingredient list by suggesting black bean falafel
Just like everyone else, I have days when I just have no energy left to make dinner so I stop by the Chipotle that is conveniently located a block from our house
Add lettuce leaf, spoonful of salsa, couple of pieces of avocadoandchipotle mayonnaise. They request many variations but we do tacos quite a bit so now the challenge comes to present tacoswith all the fresh foods your family needs

You can add tomatoes into it as well, but I felt that since I already had some in the salsa, a simple avocado-broccoli-cauliflower guacamole, or broccomole, was perfect without it
