Ingredients

  • 4 dozen cookies
  • 1 cup (2 sticks) butter
  • 1/2 cup plus 2 tablespoons granulated sugar
  • 3/4 cups packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cup plus 3 tablespoons all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon flaky sea salt or 1/4 teaspoon table salt
  • 4 cups dried, unsweetened coconut flakes (I used Bob’s Red Mills)
