  • 1 cup milk, divided
  • ½ stick (4 Tbs) unsalted butter, melted
  • ½ tsp salt
  • ½ tsp sugar
  • ¼ cup plus 2 Tbs buckwheat flour
  • ¼ cup plus 2 Tbs all-purpose flour
  • ¼ cup plus 2 Tbs spelt flour
  • 2 eggs 1½ tsp vegetable oil
  • ½ cup beer (lager would be best but I only had wheat beer around and used
  • that…it worked just fine)
  • 3 sweet potatoes, cut into ½ inch cubes
  • 1 Tbs. olive oil
  • 1 Tbs pure maple syrup (plus extra for drizzling)
  • salt and pepper
  • 6 oz shredded cheddar cheese
  • toasted walnuts
