1 lb monterrey jack cheese, shredded (don't use the pre-shredded cheese)
8 oz colby jack cheese, shredded (again, don't use the pre-shredded cheese, the additives they put in there make the cheese not melt the right way)
1/4 cup blue cheese crumbles
green onions (optional)
