Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 lb ground turkey
  • 1 tbsp canola or avocado oil
  • 4 green onions, chopped, whites and greens separated
  • 2 stalks celery, diced
  • 1 large carrot, diced
  • 1 cup corn (frozen or fresh)
  • 1 cup buffalo sauce
  • salt & pepper, to taste
  • optional toppings – avocado, ranch dressing, blue cheese crumbles
