Ingredients

  • 245 g of plain flour (1 3/4 cup)
  • 385 g of sugar (2 cups)
  • 85 g cocoa powder (3/4 cup)
  • 2 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1./2 tsp salt
  • 225 ml buttermilk (1 cup) (shake well)
  • 120 ml vegetable oil (1/2 cup)
  • 2 large free range eggs, at room temperature
  • 1 tsp pure vanilla extract
  • 225 ml hot fresh coffee (1 cup)
  • Frosting as desired (we like vanilla buttercream)
  • 8 ounces (weight) butter, softened (1 cup)
  • 12 ounces icing sugar, sifted (3 cups)
  • 1 tsp vanilla essence
  • 1 to 2 TBS double cream
  • *Chocolate Buttercream Frosting*
  • Makes 2 cups
  • 1/2 cup butter, softened
  • 2 2/3 cups icing sugar, sifted
  • 1/3 cup single cream or milk
  • 1 tsp vanilla

  • Choose ONE of the following
  • 1/3 cup unsweetened cocoa powder, sifted (for light)
  • 1/2 cup unsweetened cocoa powder, sifted (for medium)
  • 3/4 cup unsweetened cocoa powder, sifted (for dark rich)
