It has cabbage, zuchinni, carrot and Lauki (bottle goard) so came up with this name. Witth this humble vegetables I didn't want to make any simple curry , after all its Kofta so I make nice curry too
This time I didn't have spinach in hand and so I tried this Cabbage & Paneer stir fry, I used homemade paneer but the store bought one also tastes good, I also added some capsicum and kasoori methi ( dried fenugreek leaves) to add a little more flavor to the dish
Lauki KoftaCurry is a delicious Indian gravy dish which mainly comprises of two parts - Gravy made from onion tomato base & dumplings made from mixture of Bottle gourd, gram flour & flavored with spices
Place half the meat and then half the cabbage in cooker. Pour over top of cabbage. Chop cabbage into 4 wedges and remove core. Layer 1/2 of the meat mixture and 1/2 of the cabbage in the slow cooker
Replace broccoli with cauliflower, cabbage etc. I have made this healthy version, if you want you can deep fry koftas, add milk or fresh cream in curry as per your preference
If preparing ahead of time, make the meatballs up until frying and freeze or refrigerate them. This is an absolutely delicious, melt in your mouth kind of kofta meatball curry
I tried both the versions, they had no difference in them. Kofta in simple words is minced vegetable balls mixed with Indian spices, which can be deep fried or baked
In addition to the veggies I have used you can also add others like cabbage, bottle gourd etc. If you don't plan to use it within the next day or two then transfer these to freezer safe container or ziplock and freeze
