Ingredients

  • 1/2 lb chicken gizzard, cooked and chopped fine
  • 2 bay leaves
  • 1 teaspoon canola oil or 2 tablespoons vegetable oil
  • 1/4 lb ground pork
  • 2 tablespoons cajun magic poultry magic seasoning (or try copycat Prudhomme's Poultry Magic)

  • 1 teaspoon dry mustard
  • 1 teaspoon ground cumin
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped green bell pepper
  • 2 teaspoons minced garlic
  • 2 tablespoons unsalted butter
  • 3/4 cup uncooked rice (preferably converted)
  • 2 cups basic chicken or 2 cups pork stock or 2 cups water
  • 1/4 lb chicken livers, ground (1/2 cup, You can use less, but for authentic flavor, you need at least 1/4 cup) or 1/2 cup of roasted chicken (finely chopped) or 1/2 cup turkey (finely chopped) or 1/4-1/2 lb lean ground beef, browned
