Ingredients

  • 2 tbsps butter
  • 2 tsps crushed garlic
  • 1/2 c chopped onions
  • 1/2 tsp salt
  • chicken bones
  • 1 carrot, diced
  • 1/2 rib of celery, sliced
  • 1/4 tsp ground black pepper
  • 1 bay leaf
  • 2 c water
  • 2 tbsps sherry
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne
  • 1/4 tsp of dried oregano
  • 1/4 tsp of dried thyme
  • 2 chicken thighs, deboned and cut into cubes
  • 12 medium prawns/shrimps, shelled and deveined
  • creole seasoning (from the recipe above)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 large cooked chorizos, sliced (about a cup worth)
  • 2 tbsps chopped garlic
  • 1 medium onion, cut into chunks
  • 1 tbsp tomato puree
  • 1 c uncooked rice
  • 1 3/4 c chicken stock
  • 1 bay leaf (omit if using the stock recipe)
  • 1 tbsp Worcestershire sauce
  • 1 tsp hot sauce
  • 1/4 c of green pepper chunks
  • 1/4 c celery
  • 1 tsp salt (or to taste)
