I started by sautéing red bell pepper and onions and then I added garlic. The original name of this post was Caribbean RiceandBeans, but since I’ve never actually been to the Caribbean, I thought the name was a less than wise choice
My version is for a simple take on RedBeansandRice, using my Hamilton Beach Rice Cooker. Place all of the ingredients in the rice cooker and press WHITE RICE
This RedBeansandRice gets its flavor from two Cajun meats- Andouille sausage and Tasso ham. It can be used in other Cajun/Creole dishes including gumbo and jambalaya
It’s all gotten me in the mood for some classic New Orleans food—RedBeansandRice. After two hours (or longer if desired) the beans should be soft and tender
Stir in beans, mashing slightly. Add hot broth and jerk seasoning to bacon mixture. Stir in rice. Make this quick soup ahead, and divide it into small, shallow containers with lids to ensure quick cooling in the refrigerator and easy portability
Why, there are as many ways of making redbeansandrice as there are cooking shrimp I suppose. Redbeans are a classic in the south, a part of who we are and way of eating to everyone born and raised along the southern delta states
No I am not an expert on RiceandBeans in South, but an expert on spicing it up. Add cooked rice in a bowl with the beans toss with all seasonings add olive oil, blend together
When beans are cooked turn off heat. steamed rice or boiled rice. Drain soaked beans in a colanderand place them with all other ingredients except rice into a heavy 8-10 quart pot, adding just enough cold water to cover. Bring to boil over high heat, then lower heat and simmer uncovered for 2 1/2 to 3 hours or until beans are tender and a thick, natural gravy has formed. To serve, ladle about 1 1/2 cups of beans, meat and gravy over a serving of rice. 2 lbs dried red kidney beans, soaked overnight in cold water. 1/8 teaspoon crushed red pepper pod
Rice, an abundant Louisiana crop, is a staple of Cajun cooking The Cajuns simply adapted their original dishes to accommodate the ingredients that grew wild in the area
