Ingredients

  • 2 tsp rice bran oil
  • 1 tsp extra virgin sesame oil
  • 1 leek, white part, thinly sliced
  • 1 sweet potato, peeled and diced
  • a handful of baby corn, cut on the diagonal
  • 2 handfuls of sugar snap peas, destringed
  • 1 inch piece of fresh gingerroot, peeled and chopped finely
  • 1 garlic clove, crushed
  • 1 large skinless, boneless chicken breast, thinly sliced
  • 1/4 tsp ground cardamom
  • 1 tsp Chinese Five spice powder
  • 6 parings of lemon rind (don't get the pith) Julienned
  • 250 ml chicken stock (1 cup)
  • 1 tsp cornflour
  • 1 tsp Tamari soy sauce
  • salt and black pepper to taste
