  • 1 medium size sweet potato, peeled and roughly chopped
  • 1 medium size onion, roughly chopped
  • 2 tbsp extra-virgin olive oil
  • 2 garlic cloves, finely chopped
  • 5 cups vegetable broth
  • salt and pepper to taste
