  • 2 cups sugar
  • 2 cups flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp salt
  • 1 cup vegetable oil
  • 4 eggs 1 lb carrots, grated about 3 cups 1 small can (6-8 oz) crushed pineapple, drained
  • 8 oz cream cheese, room temperature
  • 1 stick butter
  • 2 cup powdered sugar
  • 1 tbsp fresh lemon juice (or a little more to taste)
  • optional: 1 cup chopped walnuts
