Ingredients

  • Cupcakes
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups very finely shredded carrots (from about 4 medium carrots)
  • 2/3 cup granulated sugar
  • 1/3 cup packed light-brown sugar
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 cup vegetable oil
  • 2/3 cup pecans, toasted, chopped and separated
  • 1/2 cup butter, softened
  • 6 oz cream cheese, softened
  • 3 1/4 cups powdered sugar
  • 1/2 teaspoon vanilla extract
