Ingredients

  • Cake
  • 250 g unsalted butter, softened
  • 250 g light brown sugar
  • 5 eggs, separated
  • 1 orange, zest and juice
  • 170 g self-raising flour, sifted
  • 1 heaped tsp baking powder
  • 100 g ground almonds
  • 100 g walnuts, roughly chopped (plus an extra handful for the top of the cake)
  • 1 heaped tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 250 g carrots, grated
  • pinch of salt
  • Icing
  • 100 g mascarpone cheese, room temperature
  • 200 g full-fat cream cheese, room temperature
  • 85 g icing sugar, sifted
  • 2 limes, zest and juice
