Ingredients

  • 225 g carrots, peeled and trimmed
  • 130 g raisins
  • 2 large eggs
  • 130 g caster sugar
  • 120 ml corn oil
  • ½ tsp vanilla extract
  • Grated zest of 1 orange 120g plain flour
  • 1 tsp bicarbonate of soda
  • Pinch of salt
  • 1 tsp ground cinnamon
  • 115 g butter, at room temperature
  • 500 g icing sugar, sifted
  • 4 tblsp freshly squeezed orange juice
