Cashew cream is basically a yummier, healthier, vegan-er way to get your cream sauce fix. I want to eat this cashew cream with ALL my spoons at ONE TIME because it is SO FREAKING AMAZING
Blend the sauce until all the ingredients are well combined, scraping the sides as necessary. Shred the cucumber and squeeze as much excess liquid out as possible
With that in mind, there wasn’t a great deal of planning that went into the meal, and what was really missing was a sauce – specifically a nice cool cucumber sauce, also known as tzatzikisauce

Soak cashew nut in warm milk for about 10 minutes and then grind it into smooth paste
What I love MOST about this recipe is that it’s light on the waistline and the gyros can totally be eaten with a big salad that has EVERYTHING but the kitchen sink in it and is drizzled with tons of greek yogurt and dill tzatzikisauce
Garnish with parsley, serve warm with Tzatzikisauce. For the Tzatziki. For the kebabs. In a bowl whisk together 1/4 cup olive oil, lemon juice, vinegar, garlic, oregano, basil, thyme, coriander and season with salt and pepper to taste (I used 3/4 tsp salt 1/4 tsp pepper)
Make Tzatzikisauce. To keep this gluten-free, I used coconut aminos in place of soy sauce, a little bit of Thai chili garlic sauce, and my personal favorite – sesame oil and seeds
So, in case you haven’t heard, Cashew Alfredo Sauce is the bomb. Place raw cashews (must be raw, not roasted) in a food processor and pulse until nuts are very fine

This dish consists of Viana’s Veggie Turkish Roast with vegan Tzatzikisauce, fresh salad of chopped Persian cucumbers, red cabbage and red peppers seasoned with Crete extra-virgin olive oil, fresh dill, oregano, salt and white vinegar
