Ingredients

  • 1 Cup Butter
  • 2/3 Cup Sugar
  • 2 Eggs, beaten
  • 1 ¼ Cup Buttermilk
  • 1 ¼ Cup Yellow Cornmeal
  • 1 ¼ Cup All-Purpose Flour
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • 1 Small Jalapeño, chopped (you may remove the seeds if you don’t want any heat)
  • ¾ Cup Shredded Cheese (I used Colby Jack)
  • 1 Cup Canned Corn, plus ¼ cup of the liquid that it comes packed in (I used shoepeg corn; you could use any kind)
