  • 1 1/2 cup milk
  • 1/2 cup sugar plus more for sprinkling
  • 1/2 cup (1 stick) butter or margarine
  • 1 teaspoon salt
  • 1/8 teaspoon ground saffron or 3/4 teaspoon ground cardamom
  • 2 eggs, at room temperature
  • 1/2 cup blanched almonds, ground
  • 1 tablespoon finely shredded lemon zest
  • Raisins
  • 1 slightly beaten egg white
