Ingredients

  • 2/3 cup finely ground pecans (or walnuts)
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 12 plump, moist prunes, pitted and chopped into small bits
  • 1/4 cup plus 3 tablespoons water
  • 1/4 cup Brandy (or cognac, Armagnac or Scotch whiskey)
  • 7 ounces good quality bittersweet chocolate, coarsely chopped
  • 1/2 cup (1 stick) butter, cut into 4 pieces
  • 3 large eggs, separated
  • 2/3 cup granulated sugar
  • 3 ounces good quality bittersweet chocolate, coarsely chopped
  • 3 tablespoons confectioners’ sugar
  • 3 tablespoons butter, at room temperature
