Preheat oven to 200°C
Grease 6 cookie cutter or mini tart molds or if you want them smaller about 8
On a tray with silicone mat or baking paper (not waxed) arrange the molds and distribute the cheese
Bake until the cheese starts to brown, first it melts, then it releases the fat and then it becomes solid
Remove from oven, let cool for 5 minutes and unmold carefully
Arrange on a serving tray
In a bowl mix the tomato cubes with the oil, basil and salt and pepper to taste
Distribute on cheese crackers
Serve
