Ingredients

  • cupcakes
  • 8 oz package cream cheese, room temperature
  • 1/2 C powdered sugar
  • 2 large eggs, plus 1 large egg white
  • 1 t pure vanilla extract
  • 1 1/2 C flour
  • 2 t pumpkin pie spice
  • 1 1/2 t baking powder
  • 1/2 t salt
  • 1 C canned pumpkin puree
  • 1 C granulated sugar
  • 1/2 C vegetable oil
  •  
  • frosting
  • 1 C light brown sugar
  • 4 large egg whites
  • 1/4 t salt
  • simmering water
  • 2 sticks unsalted butter, cut into tablespoon size pieces and chilled
  • 1/2 t vanilla extract
  • 1/2 t almond extract
  • 2 C powdered sugar
  • splash of milk (optional)
  • black crystal sprinkles (optional)
