Cheesecake in a Jar with Fruits "Caviar"

  • - 200 g frozen forest fruits;
  • - 3 tablespoons white sugar;
  • - 1- liter water;
  • - 2 tablespoons of salt;
  • - 1 bowl of ice cubes;
  • - 200 ml cold vegetable oil;
  • - 10 g powdered gelatine;
  • - 200 g whole wheat crackers, ground;
  • - 50 g butter, melted;
  • - 250 g cream cheese;
  • - 2 tablespoons of honey;


    I start the recipe by making the fruits caviar: Heat up a sauce pan, add the frozen fruits, 100 milliliters of water, the white sugar and let it simmer for about 10 minutes, stirring often and mashing the fruits. Save some fruits for decorating. After that, strain the fruits and set aside, we will use only the syrup. Now hydrate the gelatin in 50 ml of water for 10 minutes, stir in the syrup until the gelatine is completely dissolved. Then pour the syrup into a squeeze bottle.

    Now prepare the ice bath: in a big bowl, add the rest of the water, salt, and the ice. Pour the cold vegetable oil in a bowl and place it in the ice bath. Now start to drop the syrup in the oil. The drops will solidify in contact with the cold oil.

    After the caviar, let's make the cheesecake: Combine the crackers with the melted butter, place the mixture in the jar and sprinkle some fruits. Now mix the cream cheese with the honey and add it to your jar. Decorate with fruits caviar.
