Ingredients

  • ¼ cup white onion, small diced
  • 1 garlic clove, minced
  • 2 tablespoons almond flour
  • 1¼ – 1½ cups almond milk
  • ¾ cup nutritional yeast
  • 2 teaspoons Dijon mustard
  • ½ teaspoon kosher salt
  • 1 teaspoon sage
  • 1 teaspoon cinnamon
  • ¼ teaspoon black pepper
  • Pinch cayenne
  • 1 cup pureed pumpkin
  • 2 cups dinosaur kale, chopped
  • 1½ cups quinoa, cooked
  • 4 large bell peppers, with the tops cut off and seeds removed
  • 2 tablespoons amaranth (optional)
