This year we planted green, red, yellow, orange, and purple peppersand I know that with loving care they will continue to produce until the cool weather arrives (usually in late October to early November here)
Then, I layered on slices of juicy grilled chicken breast, basil leaves (plucked from my herb garden), fresh mozzarella, and some smoky/sweet roastedredpeppers
Use a panini press or skillet, and cook until the outside is toasted and the cheese is melted. I started with grilled cheese (the kid part) but added roastedredpeppers, portabella mushrooms and smoked gouda (grown-up ingredients)

Spread some cream cheeseand start layering withroastedredpeppers, sun-dried tomatoes, marinated onions, spinach, and feta, sprinkling the spices/herbs as desired, and roll up the flattened chicken breast
I covered them with olive oil androasted until “burnt” and the skin pulls off easily. Line a cookie sheet pan with foil to protect the peppers from sticking and for easier clean up
The eggplant and pesto had a ton of flavor and that flavor was balanced by the more mild ingredients like the roastedredpepper, lettuce and goat cheese

Rub the outside of the chickenwithpepperand salt. Season withpepperand salt. pepperand salt. I really liked the combination of red wine, balsamic with the figs andchicken, simple but elegant
Now just because I cover nontraditional fried chicken recipes don’t worry I still like to hold true to the core of the site and do add new southern inspired fried chicken recipes as they are a joy of food and no culinary experience would be complete without them
Add the roasted eggplant and bell peppers, the spinach and the chicken broth. Top each serving of soup with the crumbled turkey bacon, chopped basil and parsley, and an extra grating of cheese
