Ingredients

  • 6 Tablespoons +1 teaspoon canola oil, divided
  • 14 oz smoked sausage, sliced into half moons
  • 4 chicken breasts or chicken thighs
  • 1 tablespoon +1 teaspoon Cajun Seasoning
  • 6 tablespoons flour
  • 1 green bell pepper, diced
  • 2 celery stocks, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons tomato paste
  • 7 cups chicken broth
  • 2 bay leaves
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (more or less, optional)
