I have been searching for easy n tasty biryani recipe for a long time, after a lots of trial and error along with the help of my brother in law Murugesh chandra bose I have ended up with this Chicken Biryani recipe
The taste is equalent to the curries, which are prepared using grounded masalas. Though, we add little oil, the fat from the coconut and chicken ,will beautifully float on top of the curry, after it is cooked
Mostly I prefers traditional recipes. Turn on heat under pressurecooker with oil. I have used dry roasted pepper corns powder after pressure cooking teh chicken
Season chicken with salt and pepper then working in batches sear the chicken drumstick until brown. Heat the vegetable oil in the pressurecooker over medium high heat until shimmering
Sprinkle yellow curry powder over chicken and veggies. Add chicken, onions, and peppers to pan. Add red curry paste, coconut milk, sugar, and lime juice to pan
Then, release the rest of the pressureusing the valve. Temporarily transfer chicken and cooking liquid, if any, into the foil that was used to cover it and tumble the freshly pressure cooked rice onto the platter
Add the chicken back into the pressurecooker along with the orange zest, orange juice, lime juice, chicken broth, whole chipotle pepper(s), adobo sauce, bay leaf, and cilantro
chicken stock (will be self made from this recipe). Add the carrot chunks, layer the fresh herbs on top (without removing leaves from the tough stalks), then place the chicken fillets on top of that, followed by the broccoli, endive and any other veggies I want to throw inches
