Even though I am only cooking for my hubby and I now, I still like to make one or two family-style dishes and then portion them off for us for dinners/lunches throughout the week, and that is exactly what I did with this cheesy chicken and rice enchiladacasserole
They always crack and break, leaving a hot mess that’s delicious but not the prettiest. I used rotisserie chicken, eliminating the need to pouch the chicken beforehand
Then layer chicken mixture, cheese and repeat until all tortillas and chicken are used. In a large bowl mix shredded chicken, enchilada sauce, Pace® Salsa and 1 tablespoon of chopped cilantro

It’s vegetarian (although you can add diced chicken if you’d like). I developed this recipe for Que Rica Vida – BTW you can find great recipes in that site, in English and Spanish
Make sure you roll the enchiladas tight and place them really close together in the casserole dish. Which ever sauce you decide to make, please note that the smoked chicken holds the key to this wonderful dish
Sometimes I will have a plan for a dinner that typically goes into the oven, & I will change it so I can throw it in the crockpot saving myself from the heat & energy the oven takes to make that meal
