  • thick mozzarella, cut into 1/4 inch slices
  • 1/2 C Parmesan, shredded
  • 1/2 C italian bread crumbs
  • 1/2 C Panko bread crumbs
  • 1 C flour
  • 1/2 C EVOO
  • salt and pepper
