Ingredients

  • 1 boneless, skinless chicken breast, split in two
  • Sea salt and freshly ground black pepper
  • 70 g plain flour
  • 1 extra large egg
  • 1/2 tbsp water
  • 75 g seasoned dry bread crumbs
  • Good olive oil
  • 35 g unsalted butter, room temperature, divided in three parts
  • 80 ml freshly squeezed lemon juice, lemon halves reserved
  • 125 ml dry white wine
  • Sliced lemon, for serving
  • Chopped fresh parsley leaves, for serving
