Ingredients

  • 6 Prep Time
  • 1 teaspoon canola oil
  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 2 small potatoes, peeled and chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms (any variety you like), chopped
  • 2 teaspoons dried thyme leaves
  • 1 teaspoon ground turmeric
  • 1 bag (12 ounce) frozen veggies
  • 4 cups reduced-sodium chicken broth
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1 can (12 ounces) low-fat evaporated milk
  • 1/3 cup Wondra (super fine) flour
  • 2 cups cooked chicken, chopped
  • 1 tablespoon fresh lemon juice
  • 1 package frozen pie crusts (thawed)
