Ingredients

  • 8 ounces of floury potato, peeled and diced (1/2 pound)
  • 8 ounces cauliflower florets (1/2 pound)
  • 2 ounces finely grated parmesan cheese (1/3 cup)
  • 1 ounces grated red leicester cheese* (1/4 cup)
  • 1 spring onion, finely chopped
  • salt and black pepper to taste
  • 1 large egg, plus one egg white
  • oil for frying

  • crispy cooked bacon, chopped
