Ingredients

  • 1/2 cup mayonnaise (I use dairy-free Hampton Creek Just Mayo)
  • 1 tsp curry powder
  • 1 tsp sea salt
  • freshly ground black pepper & garlic powder, to taste
  • 1 cup pitted and diced cherries
  • 3 cups shredded, cooked chicken
  • 2 chopped celery stalks
  • 1/2 cup minced fresh cilantro
  • 2 scallions, trimmed and thinly sliced
  • 1/4 cup chopped walnut pieces
  • lime wedges, for serving
