  • 3 large eggs
  • ¾ cup kidney beans
  • ¾ cup homemade red enchilada sauce or salsa
  • ½ red onion finely chopped
  • ½ white onion finely chopped
  • 1 scallion thinly sliced
  • 3-5 tbsp of olive oil
  • Cooking spray
