  • 1/2 small (or 1/4 medium onion), diced
  • 1 hot pepper (jalapeno, pasilla, yellow hot, or other medium-hot pepper), finely diced (remove the seeds if you don't want it too spicy)
  • 1 clove garlic, minced
  • 1 large tomato, chopped (about 3/4 cup)
  • 2 cups water
  • 1 cup canned crushed tomatoes
  • 1/4 cup chopped fresh cilantro
  • 2 tsp salt
  • About 6-8 ounces tortilla chips
  • For serving
  • 4 large eggs
