Bland chilipulver, malt spisskumen, malt koriander, oregano samt chipotle eller røkt paprikapulver om du har. Ha i ca. en spiseskje vann og bland til en tykk pasta. La stå.
Stek baconet til det er sprøtt. Ha det over i en kjele. Ta vare på fettet, det bruker du som stekefett til kjøttdeig og løk.
Stek kjøttdeigen, gjerne i to omganger så den blir stekt og ikke kokt. Ha kjøttet over i en kjele.
Stek løken til den er blank, ca 5 minutter.
Ha i hvitløken og chilien. La løk, hvitløk og chili surre i ca. 2 minutter.
Ha i krydderpastaen og surr i ytterligere 2 minutter. Hell alt over i kjelen.
Ha i kraften (vann og buljongterning går bra), tomatene og paprikaen.
La småkoke i minst 1/2 time så smakene setter seg.
Ha i bønnene og la chilien koke et par minutter til den er gjennomvarm.
Smak til med salt og nykvernet pepper.
Tips: Kjøp hele kryddere og mal dem selv i morter eller krydderkvern. Holdbarheten er mye lengre for hele krydder og det smaker mye bedre. Rist gjerne krydderne i stekepannen til du kjenner krydderduften før de males.
Tips: For å flå tomatene har du dem i kokende vann i ca. 10 sekunder, deretter over i kaldt vann.
Serveres med ris og en rømmeklatt.
Tips: Litt hakket rødløk på toppen smaker godt og noen tortillachips ved siden av gir litt tyggemotstand.
Tips: Lag gjerne dobbel dose og frys ned resten, men vent gjerne med bønnene - de er ikke så veldig glad i frysere.
