at 18 degrees. 2. In a mixing bowl, add curd,oil, sugar and vanilla essence. Whisk well till the sugar completely dissolves. 3. Add baking powder and baking soda and give a mix. 4. Now add the flour in two shifts and whisk to mix well without lumps. 5. Finally add flour dusted chocolate chips in the batter. Reserve a tbsp. of choco chips to sprinkle on top of muffins. 6. In a muffin tray,place muffin liners, pour 2 scoops or ¾ level of batter on each cup. 7. Bake in pre-heated oven for 20 to 25 mins. Remove and check in centre using tooth pick. If it comes out clean, the cupcakes are done. 8. Cool the cakes completely in a wire rack and serve.
I chose not to add the chocolatechips to the frosting because I knew it would be difficult to pipe, so pipe frosting and then garnish cupcakes with mini chocolatechips
With the frosting sitting pretty on top of the cupcakes, a little sprinkling of mini chocolatechips and garnished with a half cookie, there was nothing I wanted to change
