I got it in my head to recreate the Jaffa Cake experience in actual cake form – a lovely light sponge, layeredwith the best Seville orange marmaladeand smothered with a mirror-like chocolate glaze
using tablespoons, dollop alternate spoonfuls of batter into the bottom of the tin ensuring there are no air gaps and keep going with a second layer making sure you alternate the batter, then with a knife or skewer run it through the batters blending them in swirls
Spread a thicker, smooth layer over the top (the sides do not need to have much chocolate frosting, since you will be piping vanilla flowers all over the sides)
If you like, you can also drizzle the layerswith some of the chocolate glaze as well. All I could think yesterday was 'I need some chocolatecake' and I ended up making said cake on autopilot – the mere actions of measuring the ingredients and greasing the tin were so familiar and soothing in themselves, I felt much better afterwards
My mum varied the recipe a lot – sometimes making a vanilla cakewith a white glaze, more often a chocolateand orange marblecakewith rich chocolate icing

Place the Chocolate, Orange and Clove Infused Ganache filling into a piping bag and squeeze a small amount of the filling into the centers of the cooled cupcakes
It's a chocolatecakewithchocolate buttercream, ganache, and of course, pistachio whipped cream. On a low setting beat the flour mixture into the butter andchocolate mixture, alternating with the sour cream in two halves
Reduce speed to medium and gradually add the ganacheand allow to incorporate. Because not much in this world can beat the combination that’s chocolateand caramel, the cake, once layered, is drizzled with a gooey salted caramel fudge sauce and sprinkled with crushed sesame snaps – a favourite childhood indulgence of mine – for an added sweet crunch and a touch of nostalgia
Place at least four layers. With the help of a spoon, pour the dough alternately, one with orange and the other withchocolateand so on until finish the dough
Birthdays demanded some sort of chocolatecake or pie…. I tweaked the recipe by adding a thick, decadent filling of white chocolateganacheand an extremely rich chocolate buttercream frosting
