  • 100 g double chocolate cookies
  • 20 g finely chopped roasted hazelnuts
  • 10 g soft brown sugar
  • Groundnut oil, for greasing
  • Ice cream
  • 75 g caster sugar
  • 2 large organic egg yolks
  • 125 g good quality dark (70%) chocolate, plus 50g grated
  • 250 ml double cream
  • 50 g unsalted butter
  • Dark chocolate layer
  • 100 g good quality dark (70%) chocolate
  • 100 g crème fraîche
  • 100 g Greek yoghurt
  • ⅛ tsp fine (ground) sea salt (optional)
  • Milk chocolate
  • 130 g good quality milk chocolate
  • 120 g crème fraîche
  • 80 g Greek yoghurt
  • ⅛ tsp espresso powder (optional)
  • Colour of caramel
  • 160 g good quality white chocolate
  • 140 g crème fraîche
  • 60 g Greek yoghurt
  • ½ tsp vanilla bean paste
  • Chilli caramel lattice and curls
  • 150 g double cream
  • 50 g salted butter
  • 50 g vanilla sugar (or caster sugar and ½ tsp vanilla extract)
  • 160 g good quality dark (70%) chocolate
  • 30 ml Cointreau
