Ingredients

  • Meringue Layers (make 3 layers)
  • 5 egg whites, room temperature
  • 1/3 cup sugar
  • 1 tbl lemon juice
  • Fresh Mint Cream Filling
  • 2 tbl fresh mint leaves, washed and dried
  • 1/4 cup granulated sugar
  • 2 tsp gelatin
  • 1 1/2 tbl cold water
  • 1 cup heavy cream, room temperature
  • 3/4 cup sour cream or Greek yogurt, room temperature
