Ingredients

  • 10 large egg whites, room temp
  • 1 cup (240 ml) (225 gm) (8 oz) white granulated sugar
  • 1 teaspoon (5 ml) (3 gm) cream of tartar
  • ¼ cup (60 ml) (20 gm) (2/3 oz) Dutch processed cocoa (optional and not traditional)
  • 1 cup (240 ml) (120 gm) (8½ oz) chopped, M&Ms
  • 1 cup (240 ml) (120 gm) whole M&Ms (to decorate the sans rival)
  • 5 large egg yolks, room temperature
  • 1 cup (240 ml) (225 gm) (8 oz) white granulated sugar
  • 1/4 cup (60 ml) water
  • 1¼ cup (300 ml) (2½ sticks) (285 gm) (10 oz) unsalted butter, room temperature
  • 2 oz (55 gm) unsweetened chocolate, melted

  • 4 ounces bittersweet chocolate, melted
  • 1 1/2 cups milk
  • 2 1/2 cups cream
  • 1/2 cup sugar
  • 1/4 cup powder sugar
  • 1/3 cup cocoa powder
  • 1/4 tsp salt
  • 5 egg yolks, whisked
  • 1 tsp vanilla
