  • 4 tablespoons unsalted butter, at room temperature
  • 1/4 cup brown sugar
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla
  • 4 tablespoons milk
  • layer 2 - creamy cheesecake
  • 1 pound (2 8-ounce packages) cream cheese, at room temperature
  • 2/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 2 eggs, at room temperature
  • 2/3 cup heavy cream
  • layer 3 - french chocolate mousse
  • 6 ounces semi-sweet chocolate, chopped
  • 3 tablespoons unsalted butter
  • 3 eggs, separated
  • 1/2 teaspoon cream of tartar
  • 1/4 cup + 2 tablespoons granulated sugar
  • 1/2 cup heavy cream, cold
  • 1/2 teaspoon vanilla
  • top layer - ganache
  • 1/2 cup heavy cream
  • 5 ounces bittersweet chocolate, chopped
  • 1 teaspoon vanilla
