  • 1 cup arborio rice
  • 8 oz cured chorizo, chopped
  • 1/2 cup onion, diced
  • 2 garlic cloves, diced
  • 1/4 cup green onions. sliced
  • 1/2 cup pecorino romano cheese
  • 4 cups vegetable broth
  • 1 cup dry white wine
  • 1/4 cup dried ancho chiles, sliced
  • 2 Tablespoons olive oil
