  • 4 lb sirloin tip roast
  • 1 lb un
  • herbes de provence
  • kosher salt
  • freshly ground black pepper
  • 3 slice of bacon
  • 10 minutes
  • 145 degrees
  • 1/2 hours Remove the roast from the oven, tent with foil, and let stand for
