Ingredients

  • 750 g plums
  • 1 cup white vinegar
  • 1 cup caster sugar
  • 8 cm piece of fresh ginger, skin removed and sliced and thinly as possible
  • 1 teaspoon ground sea salt
  • 2 small cinnamon sticks
  • 1 large orange, zest only
  • 1/2 teaspoon ground cloves
